Pre-soaking, re-dehydrating beans for quick cooking later?
 
Do any of you pre-soak beans and then re-dehydrate them for easier cooking later? A friend recommended this to me in lieu of soaking the beans right before cooking, but I haven't had a chance to experiment yet.

I always wondered why they do that.

I thought I remeber hearing something to do reducing the amount of gas a person may get.

I dont know ......... Im eager to find out myself.

Either 1) boil for for 2 minutes, then turn off the heat and leave covered for one hour before cooking, or 2) cover with a couple inches of water and let them soak at room temperature overnight before cooking the following day. Soaked beans should be used immediately or, I suppose, they would keep in the refrigerator for 2 or 3 days. But, once they're rehydrated, they don't have a long shelf life.

I soaked too many last time and froze some....

not sure what they will be like though.

Either wash and soak overnight before cooking or wash and cook from dry with a pressure cooker.

I wouldn't rehydrate them after cooking and drying them until I'm ready to eat them. I'm just trying to reduce the cooking time of beans in my food storage.
